My Raw Version of Fattoush Salad

 My Raw Version of Fattoush Salad

Makes a delish side salad or a quickie lunch

Quickie Recipe – GO!

The Stuff:
handful of grape tomatoes
half an avocado
quarter of a red onion
quarter of an English cucumber
a few sprigs of fresh mint
a handful of leaves of fresh Italian parsley (not the curly one)
a handful of fresh basil

Do What:
Roughly chop it all up.

Cover:
Pour on top a touch of olive oil, quarter of a lemon squeezed, a PINCH of salt and all the pepper your little heart desires. Mix.

Eat:
And enjoy.
